Types of vinegar
In our country, the most common types of vinegar are apple and synthetic, it is also table, then grape. Have you heard of the existence of coconut vinegar? Let's take a closer look at each species.
Apple vinegar
The most favorite type of vinegar in many parts of the world. It is much lighter and softer than wine, it contains a large amount of vitamins, minerals and amino acids, which makes it very useful. The best is the French variety of the product, which is made from Norman cider. This vinegar turns out to be very soft in taste, characterized by a slight acidity and an exquisite aroma.
Apple vinegar is suitable for preparing fish broths, chicken dishes and for adding it to apple compotes. The ability to make such vinegar at home comes in handy during the harvest season, when there are a lot of apples, and there is nowhere to put them. Among women, apple cider vinegar is very often used as a weight loss aid, but we will talk about this a little later.
Balsamic vinegar
The most expensive type of vinegar, which has been produced since ancient times in northern Italy. The main ingredient of the product is elite grape varieties. Fermentation is provided by a special mold. After that, the prepared vinegar is heated, thickened and boiled. But this process is not slowed down either. After all the manipulations, he is sent to wander in wooden barrels for 12 (!) Years. Previously, containers were previously kept under the scorching rays of the sun, and then placed in attics. Now the principle has not undergone any significant changes, but has become somewhat more modern.
The end result is a thick, syrupy product that resembles very dark amber in color. Its taste is sweet and sour, and its aroma is unique. He has a number of his gourmets who prefer to purchase a real product that is not cheap.
This type of vinegar has three quality options: traditional (tаdizionаlе), superior (qialita superioge) and especially vyrezhenny (extga vesshiо). On the shelves of our stores, there is mainly a pasteurized product, the aging period of which is limited to 3-10 years. The most prestigious varieties are the second and third, the aging period of which reaches 50 (!) Years and more. The latter have a very high concentration, so they are added to dishes in very small portions, literally a few drops.
Its application directly depends on how old the product is. Young ones are used in the preparation of fish and seafood, more seasoned (in a very small volume) are combined with strawberries or raspberries. Also, vegetables and meat are often spiced with such vinegar.
Wine vinegar
The French have always been famous for their delicious wines, is it any wonder that their wine vinegar is considered the best? Probably not. Such a product comes in two colors - white (prepared from white wines and fermented in stainless steel containers) and red (prepared, respectively, from dark wine, and for fermentation it is placed in special barrels). The latter type of vinegar has a richer and more aromatic taste, for which it is most valuable and, naturally, more expensive.
Even in France, you can find champagne vinegar, which is made from the sediments found on the corks from the mentioned drink. Wine vinegar is often popular in Mediterranean cooking, which is understandable. This product is natural and capable of giving the dish an unforgettable aroma, piquancy of taste and useful properties. It is customary for them to fill marinades, salads, add it to hot dishes, you cannot do without it when preserving. Initially, wine vinegar was prepared exclusively from grapes, but progress has done its job and now people have got used to preparing it from sugar-containing plants.
Table vinegar
Table vinegar, aka synthetic vinegar, does not have such a beautiful history as other types. We can only say about it what a German scientist invented it in 1898. Since then, as the cheapest kind, it has been widely used all over the world as a dressing for salads, spices and as a preservative. Regardless of the concentration of table vinegar, be it 6% or 70%, it still needs to be diluted with water to a state of 3%.
Coconut vinegar
Coconut vinegar is widely distributed and produced in southern India as well as parts of Asia and the Philippines. It is obtained from coconut milk, which is fermented without being extracted from the fruit. The final product has a sharp and strong, but at the same time sweetish taste, it contains a lot of amino acids and vitamins. Its main application is the preparation of dressings for chicken salads, seafood, as well as the preparation of marinade for pork dishes.
Rice vinegar
In Asia, the most popular vinegar. China is considered its country of origin; since its inception, for a long time it was considered the privilege of exclusively the upper strata of the population. This vinegar is considered the mildest, in contrast to the same apple cider vinegar and even more so synthetic table vinegar. Something more similar to balsamic. If you look at it from the point of view of benefits, then it contains a lot of amino acids.
This species is distinguished by categories: red, black, light. Sometimes it can be specially sweetened or seasoned. Black vinegar is used as a spice; light vinegar is mainly added to sweet and sour sauces. It is actively used for dressing salads, preparing meat marinands. As strange as it may sound, rice vinegar diluted in water is often used in Asia as a thirst quencher.
But that's not all. In addition to the aforementioned types, there are also cane, malt and sherry vinegar. Each of them has a unique taste, has a unique aroma and rich history of origin.
The benefits of vinegar

It contains a lot of calcium, iron, magnesium, fluorine and phosphorus, as well as silicon. Among vitamins, these are C, B, E. Vinegar recipes
Let's take a look at different options for making homemade vinegar.
Berry vinegar
Any berry vinegar is prepared according to the same principle. Pour freshly squeezed juice into a glass dish, then throw in a piece of rye bread, abundantly soaked in 9% table vinegar. The jar needs to be covered and tied with gauze, which is pre-folded in four layers. The container is placed in a dark, cool place for a month. After that, the finished product is developed in bottles.
Wine vinegar
Take about one and a half kilos of berries, remove the twigs. Crush the berries and fold in a 3 liter jar. Pour in 1.5 liters of clean water and add a glass of sugar. Tie the container with gauze, previously folded in several layers. Set it in a ventilated and dark place to ferment for three months. At the end of the period, strain the vinegar and pour it ready-made into clean glass jars.
Apple vinegar
For cooking, you need very ripe, and preferably overripe apples. Ideally, the fruit will be grown in their own garden or the garden of friends or relatives in order to know for sure that they are free of chemicals.
Wash them thoroughly, chop finely and crush. Put what happened after all the manipulations in an enamel pan, add sugar, at the rate: 50 g per kilogram of fruit, if the apples are sour, take twice as much sugar. Fill everything with hot water, but not higher than 70 ° C. The liquid level should not be higher than two centimeters of the apple level. Place the container in a warm place, but not in the sun. Stir twice a day.
After a couple of weeks, strain the vinegar through four folded gauze and pour into ready-made jars. Do not pour the whisk, leave 7 cm up to the neck. Close the lids and let sit for a couple of weeks. After that, the product can be considered ready.
