What are cupcakes
Cupcake, or the so-called cake with a glass, came to us from America. It resembles an ordinary cupcake, with the exception that the cupcake is baked with a filling and covered with cream on top. This is such a peculiar little cake.
Cupcakes are very convenient to use at various holidays and celebrations. After all, the cake must be cut, laid out on plates. And here is a ready-made piece, individually wrapped.

Chocolate cupcake recipe
Option 1
For cooking you will need:
- butter 200 g;
- cognac 100 ml;
- vanilla essence tsp;
- sugar 250 g;
- flour 250 g;
- cocoa 100 g;
- egg 2 pcs;
- a pinch of salt;
- 0.5 tsp soda;
- chocolate bar;
- icing sugar 100 g.
Preparation:
- Allow the butter to warm up a little, so that it becomes soft and pliable. The main thing is not to melt at all.
- Then add all the sugar, brandy and essence to the butter (100 g), mix into a homogeneous mass. Whisk.
- Enter eggs into the blank, mix. Add salt, soda, cocoa (50 g) and flour. Knead the dough well. There should be no lumps.
- Divide the finished dough into cupcake tins.
- They are baked at two hundred degrees. Check readiness with a wooden stick. But you will see how they got up.
- While the cupcakes are baked, prepare the cream. Melt the chocolate in a water bath. Add butter, powder, and leftover cocoa to it. Whisk until airy.
- Cool the finished cupcakes, and apply the cream on the cold ones.
Option 2
For cooking you will need:
- mayonnaise 200 g;
- sugar 100 g;
- flour 2 cups;
- baking powder packaging;
- vanilla sugar small package;
- cocoa 50 g;
- water 50 ml.
Preparation:
- Mix all bulk ingredients.
- Whisk the water and mayonnaise in a deep bowl.
- Without stopping the whipping process, gradually add the free-flowing mixture.
- The result is a wonderful cupcake dough. Divide it into tins and place in the oven for twenty minutes. Cupcakes should be baked at two hundred degrees.
Important! This type of dough rises very well. Therefore, filling out forms should be only half or a little less.

For those on a diet
For cooking you will need:
- corn flour 50 g;
- rice flour 40 g;
- fat-free cottage cheese 50 g;
- skim milk 50 ml;
- eggs 3 pcs;
- baking powder tsp;
- large raspberries 100 g;
- coconut flakes 2 tablespoons;
- honey 2 tbsp
Preparation:
- Beat egg yolks, sugar and milk until foamy.
- Sift flour, add baking powder, whipped yolks. Mix all.
- Add cottage cheese and beat well.
- Beat the whites separately until foamy. Add them to the resulting dough and mix gently, moving from bottom to top.
- Take a cupcake mold, fill the bottom with a little dough, no more than a teaspoon. Place 1 raspberry in the center and cover with dough. Do this with each shape.
- Cupcakes should be baked for twenty minutes at two hundred degrees.
You can decorate the cupcake on top with any light cream. Or whisk the fat-free cottage cheese and stir in the berries.
Crab mousse cupcake
For cooking you will need:
- flour 50 g;
- baking powder tsp;
- tbsp lemon juice;
- egg 1 pc;
- crab sticks 9 pcs;
- the fattest cream 130 ml.
Preparation:
- Start with a mousse. Add a pinch of salt to 100 milliliters of cream and beat until lather.
- Finely chop the crab sticks using a blender. Add lemon juice to the resulting gruel. Stir.
- Combine the cream and chopped sticks. Mix into a homogeneous mass. Add more salt or pepper if desired. Put it in the refrigerator.
- Sift flour, add baking powder, eggs, 30 ml cream, a pinch of salt and stir.
- Cut the remaining crab sticks into small pieces and add to the dough.
- Lightly coat the cupcake molds with oil and put the finished dough in them, two-thirds.
- Cupcakes are baked for thirty minutes at 180 degrees.
- After the cupcakes are cooked, let them cool down. Then garnish with crab mousse.
