Korean salads have become very popular and have firmly taken their place in European cuisine. Korean carrot salad goes well with many foods. It is used as the main ingredient while adding other ingredients.

Korean carrot salad

Root celery carrots

For the salad you will need:

  • root celery - 0.5 kg;
  • Korean carrots - 300 g;
  • any greens to taste;
  • vegetable oil -70 g;
  • 1 tbsp. l. lemon juice.

  1. Root celery is chopped into thin strips, salted, poured with lemon and left for 10 minutes.
  2. Next, you need to mix vegetables, sprinkle with finely chopped herbs and season with vegetable oil.
  3. The celery root is rather dry in structure, so the taste of the salad will improve if left to stand for a while.

Cauliflower with Korean carrots

You need to prepare:

  • medium cauliflower forks;
  • Korean carrots - 300 g;
  • green onions, only its green part is used;
  • any greens to taste;
  • 70 g of vegetable oil.

Cooking will not take long:

  1. Forks of cauliflower are disassembled into inflorescences and boiled.
  2. Next, the cabbage is cooled and mixed with Korean carrots, chopped herbs and all the seasonings are added.

Multicolored salad with the addition of Korean carrots

For the dish you will need:

  • daikon - 2 pcs.;
  • Korean carrots - 300 g;
  • sweet bell pepper, can be of different colors - 3 pcs;
  • juice of one lemon;
  • any greens and a clove of garlic;
  • vegetable oil - 70 g;
  • sesame seeds - 30 g.

You need to prepare the dish according to the following scheme:

  1. Daikon and bell peppers are chopped into narrow straws, garlic is added, salted and poured with lemon.
  2. The vegetables should be kneaded and allowed to stand for 10 minutes.
  3. Then Korean carrots are mixed with daikon, bell pepper is put, poured with vegetable oil and sprinkled with pre-fried sesame seeds.

Chicken and Korean Carrot Salad

Required Ingredients:

  • chicken meat - 400 g;
  • small croutons - 50 g;
  • Korean carrots - 250 g;
  • greens;
  • mayonnaise - 100 g.

The recipe is simple and looks like this:

  1. Chicken meat is boiled or baked in the oven.
  2. The cooled meat is chopped into small pieces, mixed with carrots, herbs, crackers and mayonnaise.

Puff salad

Required:

  • chicken meat - 400 g;
  • eggs - 4 pcs;
  • Korean carrots - 200 g;
  • hard cheese - 100 g;
  • mayonnaise - 200 g;
  • any greens.

Cooking steps:

  1. Chicken fillet is boiled or baked in the oven.
  2. Chopped components are laid out in layers: the first layer is chicken, then Korean carrots, eggs and the last layer is grated cheese.
  3. All layers are soaked in mayonnaise.
  4. Top of the salad is decorated with dill.

Korean bean salad

Required products:

  • beans - 300 g;
  • Korean carrots - 100 g;
  • 1 sweet pepper;
  • medium-sized onion head;
  • 1 tbsp. l. soy sauce;
  • 70 g of vegetable oil;
  • ground coriander;
  • 2-3 cloves of garlic.

Stages of work:

  1. The legumes are soaked for 5 hours. To speed up the process, add a little baking soda and sugar to the water.
  2. Boil the beans, add salt towards the end of cooking.
  3. Chilled beans are mixed with Korean carrots and fried onions.
  4. Next add bell pepper, chopped into cubes.
  5. Season with soy sauce, cilantro and garlic.

Ham or chicken fillet is added to the festive version of the bean salad. You can add cabbage to the salad, which is chopped large enough, salted, poured with vinegar or lemon and crumpled to soften the cabbage.

Korean salad with mushrooms

For Korean mushroom salad, take dried shiitake mushrooms or oyster mushrooms.

Shiitake salad

  • shiitake mushrooms - 100 g;
  • Korean carrots - 100 g;
  • onion - 1 pc;

  • oyster mushrooms - 500 g;
  • onion head;
  • 1 tbsp. l. vinegar;
  • dry coriander, bitter pepper;
  • garlic and half a bunch of cilantro;
  • 70 g vegetable oils.

Stages of work:

  1. Boil the mushrooms and let them cool down.
  2. Boiled oyster mushrooms are mixed with shredded onions and seasoned with vinegar, spices and herbs, left under slight oppression for 2-3 hours.
  3. Ready mushrooms are poured with vegetable oil.

Korean Cucumber Salad

It will require:

  • cucumbers - 500 g;
  • tomatoes - 2 pcs;
  • onion - 1 pc;
  • sweet pepper - 1 pc;
  • garlic, spices, any herbs.

Recipe:

  1. Washed cucumbers are cut into cubes 3-4 cm long, salted, thinly chopped sweet peppers, garlic, herbs, lemon juice are added.
  2. While the cucumbers are pickled, the onions and tomatoes are fried.
  3. Next, the cucumbers are mixed with onions.
  4. Korean cucumber salad tastes better if left to stand for 1-2 hours.

There is a salad option with the addition of meat. Boiled meat is cut into ready-made cucumbers, cut into small thin pieces. Or the meat is cut into small narrow strips, fried with onions and tomatoes, and then mixed with seasoned cucumbers.

Asparagus salad

Rather, it is not asparagus, but a soy product that looks like long light yellow sticks. For the salad you will need:

  • asparagus - 1 pack;
  • tomatoes - 2 pcs;
  • onion - 1 pc;
  • lettuce leaves (lettuce) - 1 bunch;
  • garlic and herbs;
  • hot pepper, ground cilantro.

Recipe:

  1. Asparagus is soaked in hot water, being careful not to overexpose it, otherwise it will become too soft and lose its shape.
  2. While the asparagus is soaking, fry the onions and tomatoes.
  3. Rinse lettuce and herbs.
  4. The finished asparagus is poured into a colander and cooled.
  5. Next, asparagus, lettuce, frying with tomatoes are mixed and seasoned with all the spices.

Soy protein salad

Prepared from:

  • tofu (soy protein) - 250 g;
  • cucumbers - 3 pcs;
  • tomatoes - 2 pcs;
  • green onions - 1 bunch;
  • bell pepper - 1 pc;
  • fried sesame seeds - 0.5 tbsp. l .;
  • vegetable oil - 70 g;
  • soy sauce - 2 tbsp. l .;
  • spices to taste.

Recipe:

  1. Tofu is cut into 3x3 squares and fried in a pan.
  2. The soy product should be broiled over medium heat on both sides, about 5-7 minutes, and hardened in texture.
  3. Cucumbers, peppers and tomatoes are cut into rings.
  4. Combine the ingredients, mix in green onions, spices to your taste, season with soy sauce.
  5. Sesame seeds are placed in the prepared dish.

Eggplant salad with meat

The dish is prepared from the following products:

  • meat - 300 g;
  • eggplant 1 kg;
  • onion - 2 heads;
  • 3 bell peppers;
  • red hot pepper;
  • garlic - 2 cloves;
  • green cilantro;
  • vegetable oil - 80 g.

Step-by-step instruction:

  1. Eggplants are cut into large strips, salted, crushed and kept for 3 hours.
  2. The meat is cut into small narrow strips, fried with onions, then tomatoes are added.
  3. Eggplants are pressed and combined with meat.
  4. Bulgarian and hot peppers are cut thinly and fried with meat and eggplants, for about 5-7 minutes.
  5. Garlic and green cilantro are added to the finished dish.

Zucchini salad

It is better to choose small zucchini. So, you should prepare:

  • zucchini - 1 kg;
  • bell peppers - 2 pcs;
  • half a lemon;
  • garlic - 2 teeth.;
  • sesame oil - 50 g;
  • herbs and spices to your taste.

How to cook:

  1. Zucchini is cut lengthwise into two halves and chopped into thin plates.
  2. Bell peppers are cut into strips and mixed with zucchini.
  3. Add lemon juice, all the spices and pour over sesame oil.
  4. You can drizzle over the salad with plain vegetable oil and sprinkle with toasted sesame seeds.

Vegetable Salad

To prepare it, you need to prepare:

  • white cabbage - half a fork;
  • lightly salted or pickled cucumbers - 3 pcs.;
  • vegetable oil - 70 g;
  • boiled beets - 3 pcs;
  • juice of one lemon;
  • garlic, hot pepper, herbs.

Recipe:

  1. Sliced ​​cabbage in wide strips should be properly kneaded and poured with lemon juice.
  2. Cut the cucumbers and beets into half rings.
  3. Mix all vegetables, add spices, garlic, herbs and season with vegetable oil.

Seaweed salad (kelp) with meat

You will need:

  • 200 g dried seaweed;
  • meat - 400 g;
  • onion head;
  • 3 cloves of garlic;
  • soy sauce - 2 tablespoons;
  • spices and herbs.

Step-by-step instruction:

  1. The seaweed is washed several times, then soaked for 3 hours in cold water.
  2. The meat is chopped into small pieces and fried with onions.
  3. When the cabbage becomes soft, it is washed and discarded in a colander.
  4. If the algae are long, then they are cut, mixed with meat and stewed a little. Herbs and spices are added to the finished dish.

Seaweed salad can be prepared without meat by seasoning it with fried onions.
