The best cherry pies recipes
It is rare to meet a person who would refuse a delicious pie, especially if it is sweet and with cherries. Despite the simplicity of the “dish,” it can be prepared in different ways and from different doughs, which is why it will have an excellent taste. In this article we offer you several very tasty recipes for making cherry pies.
Cherry pies made from yeast dough
Preparation of yeast dough for cherry pies:
- Pour three small spoons with a heap of yeast into a cup with a small amount of warm milk and add sugar. Knead and give stand for a quarter of an hour to activate the yeast. Now the yeast needs to be mixed with a glass of sifted flour so that no lumps form. Cover the bowl with a towel and place the resulting dough in a warm place for 20 minutes.

- dough reaches , dissolve 120 g of butter. Break three eggs, add 75 g of sugar and beat until fluffy foam appears. After the dough has come up, start kneading the dough. Add the prepared eggs with sugar to the dough and pour in the dissolved butter. All ingredients should be at room temperature or warm, but never cold or hot. Knead until smooth.
- Add 3-3.5 glasses of sifted flour to the mixture and knead the dough. When finished, the dough should be pleasant to the touch, soft and not stick to your hands. At the very end of the kneading, add a quarter glass of vegetable oil and a quarter of a small spoon of salt to the dough. These ingredients are added at the end because adding them at the beginning can interfere with the yeast's activity. Knead the dough again and then place it in a bowl sprinkled with a little flour. Cover with a towel and place in a warm place for 20 minutes. The dough is ready.

Filling for cherry pies with yeast dough:
- Rinse 0.5 kg of pitted cherries and leave in a colander for a while to drain off excess liquid. Otherwise, the finished pies will be moist inside. Some housewives, in order to prevent the dough from getting soggy, before adding the filling inside the pie, mix the berries with a small amount of starch, which absorbs excess moisture during the baking process. This will not affect the taste in any way. You will also need a little sugar for the filling, for sprinkling.
Preparation of pies:
- In 20 minutes the dough should increase in size. It needs to be gently kneaded, and then divided into portioned pieces from which the pies will be molded.
- Roll each piece into a ball and then flatten it with your palm. Place several cherries in the center of the resulting circle and sprinkle them with a small portion of sugar on top. Be careful that the cherry juice does not get on the edges of the circle - this will complicate the process of sculpting the pie, and also increase the chances that the pie will crack during baking and all the filling will leak out.
- Before putting the pies in the oven, they need to be left to proof for 15 minutes. Cherry pies are prepared for 25 minutes at a temperature of 160-180°C. To make the pies golden brown, you can first brush them with beaten egg.
Cherry puff pastries 
Puff pastries are very different in both appearance and taste from those made with yeast dough. But there is much less hassle with them, and they cook very quickly.
- Sprinkle 200 g of pitted cherries with 4-5 large spoons of sugar, mix and let stand for 20 minutes so that the berries release juice.
- Roll out a pack of ready-made defrosted puff pastry into a layer whose thickness is approximately 0.3 cm and cut into rectangles. Determine the size according to your taste.
- Place the filling on one part of the rectangle, then fold the dough into a “book” and seal the edges. You will get a square pie. As in the previous version, to prevent the dough from getting wet, sprinkle the cherries with a small amount of starch.
- These pies are baked for 20 minutes at a temperature of 180°C.
Fried pies with cherries 
- Pour 0.4 liters of warm kefir into a deep container, break a couple of eggs into it, pour in two large spoons of vegetable oil, 0.5 small spoon of salt and 80 g of sugar. Beat everything with a mixer.
- Separately, combine 750 g of sifted flour, 2 g of soda and carefully add the flour to the kefir mixture, kneading the dough so that no lumps form. The finished dough should be soft and elastic. Now let the dough rest while the filling is prepared.
- Rinse 0.8 kg of pitted cherries thoroughly and allow excess water to drain. Before adding the filling to the pies, sprinkle the berries with 80 g of sugar and mix well.
- Divide the dough into portions, roll them into balls, and then flatten them with your palm. Place some berries and sugar in the center of the resulting circle and seal the pies.
- Let the prepared pies rest for 10 minutes. During this time, pour oil into the frying pan and let it warm up thoroughly.
