The sour milk drink ayran, which came to us from eastern countries, has been known for more than one hundred years. Ayran has a unique taste and extremely useful properties. In essence, it was ayran that at one time became the predecessor of all fermented milk drinks.

Ayran recipe
Ayran is usually bought in stores or in the market, but a drink made by yourself is much tastier. There are several options for making this healthy drink at home.
The simplest recipe involves using a ready-made natural yogurt that does not contain additives. It will need 640 ml. In addition, you will need 220 ml of mineral water and coarse salt to taste. Beat the yogurt with an ordinary mixer until a fluffy mass is obtained. At the end of the process, mineral water and salt are added to it. Ayran is prepared in this way in Turkey.
Ayran from cow or goat milk turns out to be healthier and tastier than the drink prepared according to the previous recipe. Goat or cow's milk in an amount of 520 ml is boiled and then cooled to 40 degrees. Then, stirring well, pour in 155 grams of a special ferment for ayran. Everything is poured into a jar, tightly closed with a lid and wrapped around the jar with a warm cloth. Then the can is transferred to the refrigerator to ripen the drink. Before use, salt is added to the finished ayran and, if desired, diluted with cold water.
The drink is very tasty with the addition of fresh cucumber and greenery. For its preparation, natural yoghurt is used, to which chopped fresh cucumber and finely chopped greens are added. All this is beaten with a mixer, salt is added. Before the end of mixing, mineral water is poured into ayran until the desired density of the drink is obtained. Serve ayran chilled; you can even throw a few ice cubes into a glass before serving.
