Potato pancakes were made in ancient Russia, when there were no graters at all. To make potato pancakes, they simply grilled them on a sharp board, hence the name. Over time, the recipe for potato pancakes has changed, today they can be made from almost anything and for every taste.

Zucchini pancakes

Classic

For cooking you will need:

  • young zucchini 1 pc;
  • egg;
  • flour 2 tablespoons;
  • a clove of garlic;
  • salt.

Preparation:

  1. Wash the zucchini, cut into small pieces and chop in a blender or on a grater. If too much juice comes out, drain it.
  2. Add an egg, flour to the zucchini mass, squeeze out the garlic, a pinch of salt, mix.
  3. Preheat a skillet, shape the pancakes and cook for a few minutes on each side.

With oatmeal

For cooking you will need:

  • small zucchini 1 pc;
  • oatmeal 50 g;
  • 4 eggs;
  • leeks 50 g;
  • flour 30 g;
  • 2 cloves of garlic;
  • a bunch of greens;
  • soy sauce.

Preparation:

  1. The zucchini is rubbed on a coarse grater, the juice is drained.
  2. Pour flour, flakes, finely chopped onions, an egg, a little sauce to the zucchini, if you wish, you can add your favorite seasoning, mix.
  3. From the resulting dough, form large thin fritter and fry.
  4. Boil three eggs, finely grate, add chopped herbs, squeeze out the garlic, mix. You have the filling.
  5. On a ready-made potato pancake, put the filling on one side, and cover with the other on top.

For cooking you will need:

  • potatoes 1 kg;
  • bulb;
  • cottage cheese 300 g;
  • 2 eggs.

Preparation:

  1. Pass the potatoes through a meat grinder, drain the liquid.
  2. Add cottage cheese, eggs, onion to a bowl with potatoes, mix.
  3. Shape the pancakes and grill until golden brown over medium heat.

For breakfast

Cooking requires:

  • potatoes 600 g;
  • chicken breast 200 g;
  • bulb;
  • 2 eggs;
  • cheese 60 g;
  • flour 2 tablespoons;
  • greens;
  • salt.

Preparation:

  1. Grate the cheese, add chopped onions and meat, fried in advance, greens to it.
  2. Potatoes grate, drain the liquid, salt, break an egg, add flour, mix.
  3. Make a not too large pancake from the resulting dough. Fry on one side, turn over, put onion and meat filling on one side and cover with the other on top.

For cooking you will need:

  • potatoes 700 g;
  • ham 200 g;
  • champignons 100 g;
  • oil drain. 50 g;
  • 2 eggs;
  • sour cream 3 tablespoons;
  • mustard tsp;
  • cheese 100 g;
  • tbsp soy sauce;

Preparation:

  1. Grate potatoes, drain the liquid, salt, add mustard, spices if desired, mix.
  2. Finely chop the mushrooms and fry.
  3. Combine mushrooms, potatoes and soft butter.
  4. Lay out the resulting workpiece in the molds, tamp, the height to half the form, send them to the oven for thirty minutes at 200 degrees.
  5. While the potatoes are baking, the filling is being prepared: finely chop the ham, break the egg, grate the cheese, sauce, mix.
  6. After a while, take out the forms, pour the filling on top and send them back to the oven for fifteen minutes.

Potato pancakes with minced meat

Cooking requires:

  • potatoes 1 kg;
  • minced meat 300 g;
  • 2 eggs;
  • bulb;
  • spice;
  • bunch of greens;
  • 2 cloves of garlic;
  • flour 2 tablespoons

Preparation:

  1. Grate the potatoes on the coarse side of the grater, squeeze out the starch.
  2. Add minced meat, egg, spices, herbs, onion, flour, squeeze out the garlic, stir.
  3. Make pancakes and fry them in a preheated skillet.

For cooking you will need:

  • potatoes 1.5 kg;
  • egg;
  • flour 70 g;
  • sour cream 200 g;
  • spices to taste;
  • minced meat 500 g;
  • carrot;
  • bulb;
  • cheese 150 g;
  • oil drain. 30 g;
  • soda 0.5 tsp ..

Preparation:

  1. Chopped onion and grated carrots, fry with minced meat until tender.
  2. Grate the potatoes, drain the liquid, add salt, flour, three tablespoons sour cream, spices, mix.
  3. Shape the pancakes and broil.
  4. Grease the baking dish with butter, put the potato pancakes, and on top of them minced meat, grease with sour cream and sprinkle with cheese.
  5. Place in oven at 200 degrees for twenty minutes.
