Baklava recipe
Baklava is a delicious oriental sweetness, there are a lot of recipes for the preparation of which. But, despite its diversity, there are several unifying principles in the preparation of baklava, these are: layers of dough, nut filling and pouring from ghee and honey.

Azerbaijani baklava
To prepare an oriental sweetness, you need to take:
- 350 g of flour and walnuts;
 - half a glass of milk;
 - half a teaspoon of yeast;
 - one egg and separately the yolk;
 - 100 g butter;
 - a glass of sugar and a couple of spoons for syrup separately;
 - a teaspoon of vanillin;
 - 3 dessert spoons of honey;
 - 5 large spoons of water and a pinch of saffron.
 
Step-by-step instruction:
- To prepare the dough, heat the milk and add yeast, a pinch of salt to it and mix.
 - Beat the egg and pour 2 tablespoons of hot butter into it, beat again and, adding to the milk mass, mix, and then add flour.
 - While the dough is infused, you need to take one and a half cups of nuts, fry them in a dry frying pan for several minutes and grind into crumbs, and then add vanillin, a glass of sugar and mix everything.
 - Pour saffron with boiling water, leave for 20-25 minutes and mix with the yolk.
 - The dough must be divided into 6 pieces of the same size, each of which must be rolled out into a layer no more than 5 millimeters thick.
 - You need to put the first layer of dough in the mold and a layer of filling on it, pour it with melted butter, put the dough on top again and repeat everything as with the first layer.
 - Brush the top layer of the dough with a mixture of saffron and yolk.
 - Cut the baklava into diamonds, on each of which you need to put a piece of nut and send the baklava to the oven for half an hour.
 - 10 minutes before readiness, baklava should be soaked with melted honey, and 5 minutes before readiness, it should be filled with syrup made from sugar and water.
 
Turkish baklava 
Dough:
- wheat flour in the amount of 500 g;
 - 300 g butter;
 - cold water 150 ml;
 - 2 teaspoons of sugar;
 - 2 eggs and a pinch of salt.
 
Filling and filling:
- 350 g of peeled walnuts and butter;
 - a glass of honey;
 - a pinch of vanillin;
 - a teaspoon of cinnamon;
 - 150 ml hot water;
 - some powdered sugar.
 
Recipe:
- To prepare the filling, the nuts need to be chopped, not forgetting to leave a certain amount for decoration, combine with powder, cinnamon, vanilla and mix everything.
 - The finished dough must be divided into several equal parts, each of which must be rolled out into a thin layer.
 - Spread one layer on a baking sheet, pour with melted butter and sprinkle the filling on top, then put the second layer and repeat the same thing.
 - At the end of the procedure, you need to hook the edges and leave the dessert for 25-30 minutes. At the end of the appointed time, the uppermost layer should be greased with protein, cut the baklava into pieces, decorate each piece with half a nut and poison in the oven preheated to 180 °.
 - After 10 minutes, remove the baklava, pour it with honey and hot water sauce and put it back in the oven for 20-25 minutes.
 
Armenian baklava
To make Armenian baklava, you first need to make a dough from:
- 3.5 cups flour;
 - half a teaspoon of baking soda;
 - a glass of melted butter and sour cream;
 - one egg.
 
The filling is prepared from:
- one and a half glasses of peeled and chopped walnuts and sugar;
 - a teaspoon of cinnamon and the same amount of vanillin;
 - a pinch or two of cardamom can be added if desired.
 
In this recipe for baklava, two types of filling are used, the first of which is prepared from 100 g of melted butter, and the second from: 50 g of honey, a glass of sugar and 150 ml of water.
- The finished dough must be divided into even parts and rolled out each of them into a thin layer.
 - Then one of the layers should be put on a baking sheet, and the filling should be put on top, and the dough should be put on the filling again.
 - The topmost layer of dough should be greased with yolk, then the baklava should be cut into pieces, the bottom layer of the dough should be left intact. Decorate the dessert with nuts.
 - In an oven brought to 180-200 ° C, you need to put baklava for 15-20 minutes.
 - After the appointed time has expired, you need to take it out of the oven, pour everything with melted butter and put it back in the oven for 45 minutes. Then the dessert needs to be removed by updating the cuts and pouring it evenly with sugar and honey pouring it back into the oven for 5-10 minutes.
 - The finished dessert must be cut to the end before serving.
 
Baklava recipes
Light baklava
To prepare this type of oriental sweetness, you will need:
- 2 cups of nuts
 - a glass of water, sugar and melted butter;
 - a teaspoon of vanillin and lemon zest;
 - half a glass of honey and a pack of puff pastry.
 
- Lay the dough layer on a baking sheet, put the filling on top, close the next layer of dough and repeat the procedure.
 - The top layer of the dough should be greased with yolk, cut the dessert into portioned pieces, decorate each with a nut, pour over everything with honey filling and send to the hot oven for 45-50 minutes.
 
Uzbek baklava
To make dessert you will need:
- 600 g flour;
 - 300 g of sour cream and nuts;
 - 2 cups sugar;
 - some raisins;
 - 5 eggs;
 - 200 g butter;
 - pinches of soda and vanillin;
 - salt to taste.
 
The principle of cooking Uzbek baklava is the same as in previous cases, but the filling is slightly different in that it is prepared a little differently, namely: you need to beat the egg whites, add sugar, nuts, raisins, vanillin there and beat everything again.
