How to make a light pumpkin pie 
Grocery list:
- fresh pumpkin 400 g;
- egg 4 pcs;
- semolina 100 g;
- cinnamon to taste;
- orange peel 1 tablespoon;
- sugar to taste.
Preparation:
- Peel the pumpkin and remove seeds. Cut into cubes, cover with water and cook. By the way, you should not throw away seeds - this is a good source phytoestrogens.
- The pumpkin is cooked for about 20 minutes, depending on the hardness of the fibers. When the food is soft, turn off the heat, drain off excess water. Grind the pulp in mashed potatoes, using a blender or a regular potato crusher.
- While the main ingredient is cooking, pour the semolina into a dry skillet and place over the smallest heat. Cook until creamy, 7-10 minutes.
- Beat eggs in pumpkin puree in turn, add zest and cinnamon. Sugar should be added if the pumpkin is not very sweet.
- Pour in the darkened semolina and mix thoroughly. Put the mixture on the lowest heat and simmer for 5-7 minutes. Stir regularly.
- Place the prepared mixture in a greased dish and place in the oven. Bake for 20-30 minutes at 180 degrees. It's easy to check the ration for readiness - stick a toothpick in the middle. If it is dry, then the treat is ready. While the pie is baking, breathtaking smells of orange and cinnamon are flying through the kitchen.
- Cool the pie completely and remove from the mold. If desired, garnish with powdered sugar, natural yogurt, fresh berries or mint leaves.
