Grilling has been known for a long time. After all, grilling is simple, tasty and it is the maximum preservation of nutrients and vitamins. Since such dishes are prepared without oil, they are perfect for the diet of those who follow their figure and are on diets.

How to grill fish 
Fish for grilling, it is better to select with a minimum amount of fat and bones, with dense fillets. An excellent choice would be: mackerel, herring, salmon, trout, sea bass, pink salmon and chum salmon. The fish should be rinsed, peeled and dried before marinating and frying, although the easiest way is to buy ready-made fish steaks or fish fillets from stores. You can grill the fish whole, or in pieces no thicker than three centimeters.
Before cooking, a whole carcass can be greased with spices and herbs, put garlic, fresh dill, a slice of lemon, mushrooms, vegetables inside. Spread lightly on top with vegetable oil so that the finished dish does not stick to the wire rack.
For a start, it is better to marinate pieces of fish, the marinating time is no more than 20 minutes. For the marinade, you can use soy sauce, white wine, natural yoghurt, fruit juice with the addition of spices, herbs, garlic, lemon and salt. Dried dill and parsley, cilantro, rosemary, thyme, sage, juniper are perfect for pickling. For fish with red meat, the ideal marinade is a mixture of soy sauce, honey, lime juice, sesame oil and ground coriander. Fish is fried for no more than 30-40 minutes whole, and pieces for no more than 10 minutes.
Grilled salmon
What you need:
- 3 salmon steaks;
- sunflower oil;
- black pepper;
- a third of a glass of white wine;
- 80 ml soy sauce;
- a third of a spoonful of ground ginger;
- half a spoonful of lemon juice.
How to cook:
- Mix all ingredients except fish in a deep bowl.
- Put the steaks in the marinade for a quarter of an hour.
- Grill, turning frequently, for 11-13 minutes, occasionally brushing with marinade.
- Sprinkle with pepper and salt to taste.
Whole fish
What do you need:
- a fish;
- a couple of tablespoons of olive oil;
- sprigs of rosemary;
- salt.
How to do:
- Make small cuts on the fish carcass.
- Brush with salt and oil.
- Put rosemary sprigs inside the carcass.
- Grill until cooked.
How to grill vegetables 
Grilled vegetables are very tasty. They are cooked all year round, but they are especially popular in summer. For grilled vegetables, you can take anything: eggplants, tomatoes, zucchini, mushrooms, leeks, bell peppers, carrots, corn. Vegetables are very juicy and healthy. For grilling, it is better to select young and fleshy vegetables.
Before sending vegetables to the grill, they should be thoroughly washed, cut out all excess, dried, large fruits cut into small slices. They can also be marinated in olive oil, lemon juice, white wine, mayonnaise, with the addition of spices, herbs, garlic, fresh or dried herbs.
The grill grate is greased with a small amount of vegetable oil, the coals are prepared in advance. Vegetables are cooked for no more than 10 minutes. It is important to fry vegetables from all sides.
Grilled vegetables can be served directly from the grill, or you can remove the toasted crust from them, and you can also make warm and cold salads with them.
How to grill chicken 
Spiced chicken
What is necessary:
- 5 chicken breasts;
- half a glass of olive oil;
- lemon juice;
- 3 garlic cloves;
- a spoonful of paprika;
- black pepper, salt.
How to cook:
- Make small cuts in the fillet.
- Whisk butter, lemon juice and spices into a cup.
- Put chicken pieces in the mixture for 7 hours.
- Grill or skillet until tender.
Chicken in soy sauce
What do you need:
- 5 chicken breasts;
- a spoonful of lemon juice;
- a spoonful of vegetable oil and honey;
- garlic to taste;
- 4 tablespoons of soy sauce.
How to do:
- Prepare a marinade with all of the above ingredients.
- Put the fillet in the marinade mixture for half an hour.
- Grease the grill and cook the breasts for 15-18 minutes until tender.
Chicken with bacon
What do you need:
- 5 slices of bacon;
- 5 chicken breasts;
- spice;
- 5 tablespoons of dried garlic;
- rosemary sprigs.
How to cook:
- Grate fillet with garlic and spices.
- Place rosemary on each slice and wrap in bacon slices.
- Cook for a quarter of an hour on a preheated grill.
Spicy wings
What you need:
- a couple of kilograms of chicken wings;
- 250 ml Tabasco sauce;
- 120 g butter;
- salt pepper.
How to do:
- Fry the wings until tender on a preheated grill.
- In a bowl, combine Tabasco, spices and melted butter.
- Put the wings into the mixture, mix so that all the pieces are in the sauce.
How to grill meat 
Some helpful tips:
- do not salt the meat before cooking, or salt it to a minimum;
- it is necessary to cut the pieces across the fibers, the thickness should be at least a couple of centimeters;
- during frying, do not forget to turn the meat often;
- if you left the marinated meat in the cold, then remove it from the refrigerator in advance so that it warms up to room temperature;
- Put ready-made steaks on a dish and cover with foil for a quarter of an hour so that the juice is evenly distributed;
- any meat is cooked for no more than 20 minutes.
Any meat is suitable for grilling: beef, veal, pork. Almost any part is also suitable: fillet, loin, ribs... If the meat turns out to be dry, you can put a little butter on each piece before sending it on the wire rack, this will make the dish more juicy and tender. Meat is served with various sauces, a side dish in the form of potatoes, with fresh, pickled or grilled vegetables.
