How to wrap shawarma 
One of the main nuances when making shawarma is wrapping methods. This is necessary so that the dish does not fall apart and to make it easier to eat. There are several ways, the simplest is to unfold a sheet of pita bread, grease with sauce, lay out the filling on the left side, leaving a little space on the bottom and left. Now the left edge is taken and, having made two turns, the filling is wrapped. After that, the bottom of the pita is wrapped, preventing the filling from falling out and, then the shawarma is wrapped from left to right until the end of the pita.
A variant like the first - only in this case the top of the shawarma is also closed, a completely closed dish is obtained. This can be done if you want to lightly fry the dish in a pan after wrapping, the filling will not fall out of the pita bread.
Method "envelope" - in this case, the lavash is divided into two parts, one of them is laid out with the sauce and the filling slightly lower than the center of the sheet. Now the bottom edge of the pita bread needs to be raised to the center, by about half of the filling laid out. Further, the right and left edges are also wrapped towards the center with a filling. The last step is to fold the top edge of the sheet. As a result, you will get a small envelope with a filling.
And one more way - a sheet of pita bread is smeared with sauce and the filling is laid out in the center. Further, the lateral edges of the pita bread are pulled up to the middle of the sheet. After that, the bottom edge of the sheet is bent one turn to close the filling. After that, the shawarma is folded into a tube.
Shawarma sauce recipe 
In fast food places, ketchup and mayonnaise are most often put in shawarma. Less often sauces made from fermented milk products. For homemade shawarma, it is better not to use only mayonnaise with ketchup - the dish will be simple and ordinary. It is better to make a special shawarma sauce using herbs, vegetables, spices and other ingredients.
The lightest classic
What you need:
- half a spoon sour cream, fermented baked milk and mayonnaise;
- a quarter of a lemon;
- granulated sugar, salt, spices, pepper;
- 3 cloves of garlic.
How to do:
- Combine liquid products in a bowl, mixing thoroughly.
- Squeeze lemon juice there.
- Chop the garlic with a press and, pressing down with a spoon, mix with spices.
- Transfer the mixture to the liquid ingredients and beat everything with a blender.
- Leave on for 2-3 hours.
Yoghurt sauce
What you need:
- a few olives;
- a pinch of pepper mixture;
- 100 ml natural yoghurt without additives;
- 1.5 tablespoons of mustard;
- 3 tablespoons of lemon juice;
- a little oregano.
How to do:
- Mix spices, lemon juice, a little salt, mustard.
- Dilute the mixture with yogurt and beat with a blender.
- Chop the olives finely and add to the sauce.
Tomato sauce
What is necessary:
- 60 g tomato paste;
- tomato;
- half bell pepper;
- a pinch of ground red pepper;
- small onion;
- 50 ml of oil;
- cilantro;
- salt, granulated sugar.
How to cook:
- Pour boiling water over the tomato and peel it. Divide into several pieces and cut into small cubes.
- Finely chop the onion and fry in oil.
- Add chopped tomato to the onion, simmer a little.
- Put the tomato paste, salt, granulated sugar, red pepper. Cook until thick.

What you need:

- 130 ml mayonnaise;

The calorie content of homemade shawarma depends on what ingredients are in it. For example, a dish with chicken meat and yoghurt dressing will be about 112 kcal per 100 g. If you take mayonnaise instead of yogurt, then the calorie content will rise to 175 kcal. Fresh seasonal vegetables and herbs have practically no effect on the increase in the calorie content of the dish. Affects cheese, mushrooms, type of meat and type of sauce.
