Homemade Marshmallow with Gelatin Recipe 
Simple marshmallow
What you need:
- 800 g granulated sugar;
- 30 g gelatin;
- a spoonful of citric acid, or a large spoonful of juice lemon;
- a bag of vanillin.
How to cook:
- Mix half a glass of heated water and gelatin, leave to swell.
- Pour 150 ml of water into a saucepan, add granulated sugar and boil the syrup, adding vanillin.
- Beat the swollen gelatin lightly, pour it over the thickened syrup. Beat everything with a mixer, or blender by adding lemon juice or acid, until lightness.
- Pour the mass into a pastry bag and squeeze it onto a plate. Leave warm for a day, or dry it in the oven for 30 minutes at 110 degrees.
Marshmallow in chocolate 
Components:
- 100 ml each milk and heavy cream;
- 80 g dark chocolate;
- 110 g milk chocolate;
- 8 g gelatin;
- 70 g icing sugar.
How to cook:
- Heat the milk and stir the gelatin in it.
- Beat the powdered sugar and cream thoroughly with a mixer.
- Melt the chocolates in a water bath.
- Combine milk and cream, beat, refrigerate for 10 minutes.
- For this recipe, you need a silicone mold. Pour chocolate into it, spreading it with a thick layer along the walls. Put in the freezer for a quarter of an hour.
- Put the resulting marshmallow mass on top of the chocolate.
- Top with the remaining chocolate and put in the freezer for half an hour.
- Gently remove the resulting marshmallow from the molds.
Marshmallow recipe with agar agar 
GOST marshmallow
What is necessary:
- 250 g of any fruit thick puree;
- granulated sugar 475 g and 250 g;
- 10 g vanilla sugar;
- protein;
- 9 g agar-agar;
- 150 ml of water.
How to cook:
- In a deep bowl, combine vanilla sugar, 250 g granulated sugar and mashed potatoes.
- Combine agar-agar with water in a saucepan, leave for 10-15 minutes.
- Heat on the stove until boiling, add sugar and cook for 7-10 minutes. Remove from stove.
- Put the protein in the puree, beat everything thoroughly until a white foam.
- Gently and slowly pour in the syrup while whisking. This should be done until the mixture is barely warm.
- Put the mass in a bag, squeeze out marshmallows to the surface, leaving for a day.
Cherry sweetness
Ingredients:
- 210 g fresh cherries;
- 75 ml of water;
- 5 g agar-agar;
- protein;
- 370 g granulated sugar.
How to do:
- Put berries and a spoonful of sugar in a saucepan. After boiling, boil for 5 minutes. Grind into gruel.
- Mix 125 g mashed potatoes and sugar, cook for a couple of minutes.
- Soak agar-agar in warm water for 12 minutes.
- Bring it to a boil, add 230 g of granulated sugar, cook for 10 minutes.
- Combine puree and protein, beat thoroughly. Pour the syrup gently without interrupting the whipping.
- Marshmallows make with a bag, leave to dry for a day.
