Pie with cabbage and kefir

We offer a recipe for jellied pie with cabbage and kefir. It turns out very tasty, and it takes very little time and ingredients to prepare.

What you will need:

  • 1.5 cups of kefir;
  • a couple of eggs;
  • half a teaspoon of soda;
  • a couple of glasses of flour;
  • 200 g fresh cabbage;
  • 50 g butter;
  • salt and spices at your discretion.
  1. Shred the cabbage.
  2. Melt the butter in a frying pan and simmer the cabbage. Salt and pepper to taste.
  3. In a separate bowl, combine eggs, soda, salt, flour and kefir. Beat the dough.
  4. Pour the dough onto a baking sheet and place the filling.
  5. Cook in an oven preheated to 200°C. Readiness pie can be identified by its golden crust.

A few nuances that will help make this jellied pie even better:

  • It is best to prepare the filling with milk. The proportions are as follows: for 400 g of cabbage, take half a glass of milk. First, the vegetable is chopped and lightly fried. After this, milk is poured into the pan with the cabbage, everything is covered with a lid and left to simmer over low heat for about half an hour. If desired, the filling can be seasoned and do not forget to salt it. Cabbage stewed in this way will be very tender and tasty.
  • To make the filling tastier, it is better to purchase young forks that are small in size. Do not allow veins into the filling; they do not stew well and remain hard, which negatively affects the finished product.
  • Before pouring the dough into a baking sheet, the latter must be covered with baking paper (parchment), which is pre-greased with sunflower oil.
  • Pay special attention to the consistency of the dough. In order for the pie to turn out decent, the thickness of the dough should be similar to the mass for making pancakes or thick sour cream. Dough that is too thin will prevent the cake from rising and may not set well.
  • You can fill this pie in a variety of ways. The simplest one is to put the filling in a deep baking tray, pour the dough on top and mix everything with a spoon. But the best way to do it is to first pour half of the dough into a baking tray, spread out the filling, and then cover it with the rest of the dough. Then it will really look like pie, in the first case it may resemble cabbage casserole.
  • You can use not only kefir, but also mayonnaise as a basis for preparing the dough. The first one, of course, is preferable in terms of healthy eating and neutrality of taste. Mayonnaise gives the dough a rich taste, but the baked goods are more nutritious.

Kefir pie in a slow cooker

It is very convenient to cook pies in a slow cooker. They turn out evenly fried and with a golden brown crust.

What you will need:

  • a couple of glasses of flour;
  • a glass of full-fat kefir;
  • a glass of sugar;
  • a couple of chicken eggs;
  • refined sunflower oil half a glass;
  • a couple of teaspoons of baking powder;
  • a pinch of vanillin;
  • raisins or nuts as a filling - you can use it as you wish.

The amount of ingredients is designed for eight servings.

  1. In a deep bowl, beat the eggs with sugar. You don’t have to use a mixer; a whisk will do just fine.
  2. Pour in kefir. It is very important that it is not cold, but at room temperature, so it is better to remove it from the refrigerator in advance.
  3. Add vegetable oil. Mix everything very well.
  4. Mix baking powder, vanillin and sifted flour together in a separate bowl. This is important, since this is how the uniformity of the dry mass is achieved.
  5. Add flour to kefir with eggs, mix thoroughly and add nuts and raisins. By the way, if you decide to use nuts, it is advisable to first fry them or at least dry them in the microwave or oven. Then the cake will acquire a pronounced nutty aroma. It’s better to roll the raisins in flour so that they dry out a little. Mix the dough well. It turns out relatively liquid, so this should be done with a spoon.
  6. Grease the multicooker bowl with oil. Pour the dough into it. Set the unit to frying mode. The average cooking time for a pie in such a machine is about 90 minutes. However, everything depends on the specific brand of machine and its power, so for the first time you will have to control the entire process.

The finished cake can be sprinkled with powdered sugar, or left as is.

Meat pie with kefir

A wonderful pie with a crispy crust and juicy filling!

What you will need:

  • about 2.5 cups of sifted flour;
  • a glass of kefir;
  • a couple of tablespoons of vegetable oil;
  • half a teaspoon of salt;
  • one chicken egg;
  • a pinch of soda;
  • you will need sesame seeds for sprinkling;

For the filling you will need:

  • half a kilo of pork;
  • a couple of onions;
  • one clove of garlic;
  • greens to taste;
  • three tablespoons of cream or milk;
  • salt, spices and pepper according to personal preference.
  1. Start by preparing the dough. Shake a little eggs with salt, pour in kefir, vegetable oil and soda. Mix everything thoroughly.
  2. Add sifted flour to the above-mentioned preparation in such an amount that the dough itself will take it. Approximately about two and a half glasses are required. It should be soft and a little sticky, but not too much. After the dough is kneaded, cover it with a clean towel and leave to rest for 20 minutes.
  3. During this time, prepare the filling. Chop the meat into cubes and chop it along with the garlic and half an onion. Scroll through a meat grinder. The fattier the meat, the juicier the filling will be, keep this in mind.
  4. Chop the remaining onion, finely chop the greens and add to the minced meat. You can add more onion, this will only have a positive effect on the taste. Add cream (or milk, whichever is chosen). Pepper, salt and mix well.
  5. Roll out the dough on the table into a large circle. Or divide it into two parts: one a little larger, the other smaller. The thickness of the rolled layer is at least 8 mm. Place the filling in the center and smooth it out. Next, if there is only one cake, then begin to collect the edges and interlock them in one place with each other, in the center. If there are two cakes, then cover the filling on top with a smaller round and join the edges.
  6. Turn the cake over and poke the surface with a fork in several places to prevent it from puffing up. Make a hole in the center.
  7. Brush the pie with cream or whipped yolk, sprinkle with sesame seeds and place in the oven preheated to 180°C for about half an hour.
  8. Remove the finished pie from the oven, sprinkle with water and cover with a towel. Leave it in this position for a quarter of an hour.
