What I like about shortcrust pastry is that it doesn’t require rolling out and you can work with it by hand. You don’t need to knead it long and hard, and then spend long hours cleaning the kitchen table from flour.
So, for the classic shortcrust pastry you will need:
- flour 250-300 g;
- sugar 150 g;
- butter 200 g;
- egg 2 pcs.;
- baking powder or soda;
- salt, vanillin to taste.

- Place the melted butter in a large bowl.

- Add sugar, vanillin and baking powder.
- Stir well.

- Break the eggs into a separate bowl and beat lightly. The mixture should be like liquid sour cream.

- Combine the butter with the eggs and stir.

- Gradually add flour. Although it's difficult to create lumps in this recipe, adding flour in portions makes the stirring process easier. Plus, flour comes in different varieties. Somewhere you will need a little more or less.

- Fold the finished dough into a ball, wrap it in film and put it in the refrigerator for an hour or two. This is done to harden the butter, so the dough will become more elastic. It will be easier to work with it.

How to cook a delicious pie in the oven
- Remove the dough from the refrigerator.
- Divide it into 2 equal parts.
- You need to roll out the dough into a layer of medium thickness. It’s more convenient to immediately put the lump on parchment and roll it out on it. Don't worry, it won't stick.

- Do not roll out the dough too thin; it will quickly dry out and turn into cookies. The optimal thickness of the cake is 5 mm.

- The baking sheet must be covered with parchment or use a non-stick pan.
- Bake the cake for 10 minutes at 180 degrees.
- Cut the finished cake into 2 parts, the size of the cake pan.

- Collect the scraps in a bag; they will be used to decorate the dish.

- Coat each layer stuffing. Any jam, marmalade, or fruit puree will do. In this case, homemade plum jam was used.
