Delicious cloudberry jam
Northern berry, very similar in appearance to raspberries, but absolutely unlike it in color and taste - this is cloudberry. This berry grows in the tundra in swamps. It is rich in useful vitamins and microelements, can protect against viral diseases in winter and has many other advantages. It turns out tasty and healthy jam.

How to make cloudberry jam 
Berries for jam It is necessary to take ripe or slightly overripe ones. It is better not to use rotten and unripe ones.
Lemon-cloudberry jam
What you need:
- a couple of lemons;
- two kilograms of granulated sugar and berries.
How to cook:
- Sort out the cloudberries, rinse with water and dry.
- Place berries and sugar in a large saucepan and mix gently.
- Squeeze the juice from citrus fruits and pour it into the berries.
- Cover the container with a lid and leave in a cool place for 24 hours.
- After the required time, remove the container and allow the contents to warm to room temperature.
- Place over low heat for 60 minutes, stirring occasionally.
- Place the jam in sterilized jars and roll up.
Spicy recipe
What you will need:
- a couple of kilograms of berries;
- citrus;
- 8 glasses of granulated sugar;
- 3 glasses of dry white wine.
How to cook:
- Process the cloudberries, rinse and dry.
- Squeeze all the liquid from the citrus into a glass.
- Place the berries in a bowl, pour over the lemon liquid and sprinkle with four glasses of sugar. Cover and leave in the refrigerator for 12 hours.
- Remove the mixture and leave to warm up.
- Place on the stove for 15-20 minutes until the sugar crystals dissolve.
- Pour in alcohol, mix with berries, and bring to a boil over low heat.
- Catch the berries and place them in clean, sterilized jars.
- Add 4 more glasses of sugar to the remaining liquid and cook for 10 minutes.
- Pour the resulting syrup into jars with the berries and roll up.
Five-minute cloudberry jam 
What is needed:
- kilogram of berries;
- kilogram of sugar;
- 1.5 glasses of clean water.
How to do:
- Sort the berries, choosing the freshest and ripe ones, rinse with water and dry.
- Pour water into a saucepan and add granulated sugar, mix everything thoroughly.
- Bring to a boil over low heat, then cook for another 5 minutes and remove from the stove.
- Place the berries in a bowl and pour over the syrup.
- Stirring, bring to a boil and cook for another 5 minutes, removing the scum with a slotted spoon.
- The last point must be repeated at least 3 times, allowing the jam to cool slightly.
- If you don’t want whole berries floating in the jam, you can take them out before the third boil and grind them through a sieve, then return the puree to the syrup.
- Lay out the finished product jam into clean jars and roll up.
Cloudberry jam for the winter 
First option
What you will need:
- a couple of kilograms of granulated sugar;
- a couple of kilograms of cloudberries;
- liter of water.
How to do:
- Peel and sort the berries, remembering to rinse under water and dry.
- Prepare sweet syrup from water and granulated sugar. To do this, you need to bring the mixture to a boil.
- After boiling, pour the cloudberries into the syrup. Stirring, cook for half an hour.
- Catch the cloudberries from the syrup and rub through a sieve. Return the resulting slurry to the sweet syrup.
- Cook over low heat for another 10-15 minutes. Leave to cool for 10 minutes.
- Ready jam Place in sterilized jars and close with lids.
Second option
What you will need:
- 4 kilograms of sugar and berries.
How to cook:
- Prepare the berries.
- Place a layer of cloudberries in a saucepan and cover with granulated sugar. Make several such layers.
- Cover with a lid or towel and leave in a warm place for 12 hours.
- Shake the container and place on the stove for 25 minutes on the lowest heat.
- Cook for about 10 minutes and you can pour into clean jars.
